The Nocellara cultivar is the classic green aperitif olive with a rounded shape. It offers a sweet and slightly fruity flavor. The same are harvested after ripening after a careful annual pruning in order to reserve the maximum size of the drupe. The treatment after harvesting involves washing with water and after adding 7% sea salt in solution. After two months of fermentation in barrels, the product is ready for consumption, packed with fresh brine and packaged in the absence of air.
After opening the bag, it is advisable to pour the olives and their preserving liquid into a container so that they are covered with the same preserving liquid.
